For some, it's the most wonderful time of the year. For others, it's coming up too fast. For both, it still means the same thing... BACK TO SCHOOL TIME! Growing up, back to school was always a really exciting time. It meant awesome new gear, Fall (my favourite season) and friends! However, it also meant we had to start packing our lunches again (which my sister and I actually loved doing)! However, Mom ALWAYS packed us the first "Back to School" Lunch. That got me to thinking...What would make an AMAZING back to school lunch?
I went into our book section to poke around and found a SUPER awesome book:
"The Lunch Box" Packed with fun, healthy meals that keep them smiling ($21.95, available in-stores). This book has it all, starting with "The Anatomy of a Lunch Box" (think: filling foods, snackable veggies, easy to eat fruit and an interactive element like dips!) Next, it talks about stocking your kitchen which includes items that are great to have on hand, staples for the freezer and of course, packing supplies (if you're in need, check out OUR awesome lunch supplies HERE)!
Here I'm going to feature a super quick & fun lunch that would be AWESOME for the FIRST Back to School Lunch!
Zesty Chicken Salad Pita Pockets:
"Cut a slice off the top of each mini pita and carefully pull apart at the cut side to make a pocket (or if using a regular pita, cut in half and pull each half apart at the cut side.
In a bowl, combine the yoghurt, mustard and lemon juice and mix until smooth. Add the chicken, apple and celery and toss until the ingredients are evenly coated. Season to taste with salt & pepper.
Line each pita pocket with a lettuce leaf (TIP: Lettuce is recommended to avoid a soggy pita!) Spoon the chicken salad inside, dividing it evenly. Wrap each snugly in foil and slip into a sandwhich bag, or arrange in a container; seal tightly. Refrigerate until ready to go"
Add some veggies like baby carrots & small broccoli florets (OR edemame) & a yummy dip! Include a crunchy snack (like Popcorn), milk to drink, and you've got a yummy, nutritious and fun looking lunch! You could also add a little note to your little one telling them how much you love them with a little treat (Kinder Eggs were OUR favourite!)
